Cá đối rửa sạch, để ráo nước (bỏ đầu, ruột, đuôi). Hành lá rửa sạch, cắt phần đầu trắng và phần lá để riêng. Ớt rửa sạch, cắt bỏ sạch. Cho đầu hành, ớt giã nhuyễn rồi hòa với đường, nước mắm cho quyện đều vào nhau.
Sau đó xếp cá vào nồi đất thành từng con xen kẽ nhau. Tiếp đó rưới hỗn hợp nước mắm vào cùng 1 muỗng cà phê nước màu dừa rồi lắc đều. Ướp cá 15 phút cho thấm. Để cá lên bếp bắt đầu kho trên lửa vừa, khi cá sôi thì lắc nhẹ để gia vị thấm đều vào cá. Để cá sôi như vậy 10 phút thì hạ nhỏ lửa liu riu, kho tiếp 15 phút nữa là cá chín có thể tắt bếp rồi đó.
