Chùm ruột chua chua ngọt ngọt, thơm lẫn vị dâu thật là thích luôn nè. Tết này có món Mứt chùm ruột tự tay mình làm để nhâm nhi cùng người thân hoặc đãi khách thì còn gì bằng đúng không nào. Cách làm không quá khó đâu nên chị em lưu lại công thức và làm cho ngày Tết sắp đến nhé.
Trái chùm ruột rửa thật sạch, cho vào âu lớn cùng 1 muỗng canh muối và ngâm khoảng 30 phút. Sau đó rửa sạch lại, để ráo. Cho chùm ruột vào ngăn đá tủ lạnh để qua đêm. Sáng hôm sau lấy chùm ruột ra để rã đông tự nhiên, bóp cho bớt nước chua. Cho 2/3 lượng đường vào ướp cùng chùm ruột. Đợi khi đường tan thành nước thì thêm vào 1 muỗng cà phê muối. Trộn thật đều.
Cho 1 phần đường còn lại vàò tô cùng 1/2 chén nước, khuấy tan đường. Cho nước đường vào chảo, làm thành caramel hơi vàng, cho vài giọt nước cốt chanh và dâu đã xay thật nhuyễn (hoặc si rô dâu). Sau đó, cho cả trái chùm ruột và nước đường ngâm vào hết. Để cho sôi bùng lên lần đầu, bắt đầu sên mứt trên lửa nhỏ nhất đến khi chùm ruột ráo hạt, đường khô hết là được. Tắt bếp, để Mứt chùm ruột nguội rồi cho vào hộp hoặc hũ dùng dần.
