Món chè kho cũng là một trong nhiều món không thể thiếu trong thực đơn ngày Tết. Món chè kho phải đạt độ vàng, ngọt đậm và thơm làm món ăn tráng miệng thêm một tách trà nóng khách đến nhà bạn hẳn khó quên.
Ngâm đậu xanh trong nước từ 4-6 tiếng hoặc qua đêm. Sau đó đãi sạch vỏ, xả lại với nước sạch. Đem hấp đậu xanh trong 30 phút cho chín rồi xay nhuyễn.
Cho 120ml dầu bắp vào chảo, đun sôi rồi cho đậu xanh nhuyễn vào trộn đều. Sau đó thêm đường, đảo khoảng 3 phút thì thêm 5ml dầu mè vào. Tiếp tục đảo đều tay.
Đun nhỏ lửa, đảo đều liên tục để đậu xanh đến khi đậu xanh thành một khối nhuyễn dính và săn lại thì tắt bếp. Lấy một chiếc chảo khác, đun nóng lên. Đổ bột mì vào, vặn nhỏ lửa đảo đều 2-3 phút đến khi bột mì khô và hơi chuyển màu. Lăn hỗn hợp đậu xanh vào bột mỳ. Sau đó ấn vào khuôn để tạo hình.
Chè kho có thể ăn ngay hoặc cho vào tủ lạnh 1 tiếng lại càng ngon hơn.
